For the early pollinators emerging, establishing their breeding spaces and recovering from the long winter, they provide so much valuable energy.
For us, they are such a great resource
- Roots : dried to create a coffee drink
- Leaves : fresh in salads
- Flowers : syrups, beer, (they do not dry easily as they go to fluffy seeds very easily.
